QUALITY CONTROL GELATINIZATION TEMPERATURE
Starch gelatinization temperature is a key parameter controlling extract formation during mashing. When non-optimal process temperatures are applied during mashing, brewers will struggle with poor extract formation, unexpected attenuation problems and later filtration issues.
